About Us
Winter Park's first Michelin starred 10 seat multi-course dining experience featuring a modern take on omakase. It’s a “chef’s choice” dinner exploring our local Florida terra through our partnerships with farmers, fishermen, cheese and ceramic artisans. In addition, our beverage director and service team has curated a global sake and wine program to accentuate the dishes but also challenge the traditional concept of beverage pairings.

View Personal BioMichael CollantesI am currently the owner operator for Taglish, a Filipino American fast casual concept with 3 operations in town. I also operate Soseki Modern Omakase, a 10 fine dining sushi tasting menu restaurant.
Being raised in WP, I started my career as the head sushi chef at Wolfgang Pucks. It has been 20 years of working for some of the most celebrated chefs in the world from Joel Robuchon, Eric Ripert, and Masa Takayama before having the opportunity to open my own operation in Oahu. But when my wife and I decided to leave Hawaii and have kids we knew this was home.
We are very excited to continue to build restaurants and concepts in the Winter Park area. Growing our restaurant group in 3 short years, we have now opened ourselves to take on new concepts, partnerships and managing other brands.
